Rubis Gold, the little apple jewel from the North!
At Lagache, we like to surprise you with our products. Behind the products are often beautiful stories.
Here’s a wonderful one, that of the Rubis Gold apple, produced by Vergers de Seru in Ribemont (Aisne): a local, premium variety that’s simply irresistible.
An exceptional apple born of passion and research
The result of a cross between Tentation and Pirouette, Rubis Gold is the fruit of several years’ research to achieve the perfect balance:
✅ a unique taste, both sweet and slightly tart,
✅ crisp, juicy flesh,
✅ a yellow colour enhanced by a natural orange-red blush, which gives it its name.
Available from mid-October to the end of May, it can be crunched, peeled and enjoyed as a dessert or in salads and savoury dishes.

😋 Gourmet idea: Rubis Gold fine tart
A simple, elegant dessert that sublimates the flavour of this exceptional apple.
Ingredients:
- 1 puff pastry
- 3 Ruby Gold apples
- 1 sachet vanilla sugar
- A little melted butter
Preparation :
1️⃣ Preheat your oven to 190°C.
2️⃣ Roll out the puff pastry on a baking tray and prick it lightly with a fork.
3️⃣ Arrange thin slices of Rubis Gold in a rosette.
4️⃣ Sprinkle with vanilla sugar and brush with melted butter.
5️⃣ Bake for 25 minutes until golden brown.
Serve warm… a real delicacy.
