Squash puts on a show at Lagache! 🎃
31 October 2025
They’re a real eye-catcher: pumpkins, butternuts, spaghetti squash, nutmeg, patidou, délicata, Eyzines…
Lagache celebrates the season of warm colours and sweet flavours!
100% French!
“Our squash, pumpkins and butternut are 100% French, mainly from Tarn-et-Garonne and Brittany. We work with a number of passionate growers who guarantee us consistent quality and a wide variety of sizes to meet every demand,” explains Jason Allender.
A colourful range
Each squash has its own personality: the varieties offer specific shapes, colours and flavours:
– Spaghetti: yellow skin, stringy flesh that turns into spaghetti – kids love it!
– Stripetti: a cousin of Spaghetti. It has green and beige striped skin and a slightly sweet taste.
– Eyzines: orange skin, sweet melting flesh, a real favourite.
– Patidou: fine, melt-in-the-mouth orange flesh, with a mild flavour reminiscent of hazelnuts, chestnuts or almonds.
– Delicata: its soft, melting flesh is reminiscent of sweet potatoes. It has one big advantage: its skin is edible, so there’s no need to peel it.
– Jack be Little: an adorable mini-squash, not to be confused with the Jack O Lantern, a Halloween pumpkin that is inedible 🎃
– Nutmeg: dark orange flesh, dense and sweet, both melting and slightly musky, a favourite with our customers
And of course, our indestructible stars: pumpkin and butternut, always top sellers.

A season that lasts until February
From early October to February, squash can be eaten in all sorts of ways: in soup, roasted in the oven, au gratin or even as a dessert!
For Halloween, they can also be used to decorate stalls and tables, in both gourmet and decorative versions!
👩🍳 Recipe idea :
✔️ Vegetarian squash spaghetti carbonara: a light, fun dish that’s a family favourite
– Cut the squash in half lengthways and remove the seeds.
– Place the 2 halves flesh-side down on a baking tray lined with baking paper
– Bake for 35-45 mins at 180°C
– Remove the filaments with a fork, then mix with a creamy sauce made from vegetable cream, 1 egg, Parmesan and a pan-fried mushroom.
The Lagache team wishes you a happy Halloween and bon appétit!
